On Friday, October 23, 2009, the Vancouver Island University (VIU) celebrated the completion of its wood fired brick oven at the Culinary Institute of Vancouver Island (CIVI).
go2 was invited to the Opening Celebrations of the Wood Fired Brick Oven. At the event, Ralph Nilson, president of VIU, along with Fred MacDonald, dean of trades and applied technology, hosted the ribbon cutting ceremony.
Guests were served with food prepared in the wood fired oven by students from the CIVI's Culinary Arts diploma program. Debbie Yule, our vice president, industry training and Dennis Green, senior program manager attended the event.

The wood-fired oven is a joint project of the CIVI's Baking and Pastry Arts program, the Baking Association of Canada (BAC) BC Chapter, and the BAC Vancouver Island Committee. The oven is fired daily and students enrolled in the Culinary Arts and Professional Baking programs use it to bake breads, bagels and pizza.
