Responsibilities: 

  • Ensuring the smooth operation of the respective area of the kitchen 
  • Managing Lupins Café, Rusty Rail, and all other required kitchen operations
  • Creating menus for the respective areas of the operation 
  • Performing full range of supervisory functions including coaching staff, on-the-job orientation of staff, training, probation reports, performance reviews, recruitment, etc. 
  • Ensuring the kitchen operations costs are within the parameter of the profit plan; ensuring labour costs meet daily and monthly targets 
  • Maintaining a standard of food quality in accordance to the guideline of the company 
  • Costing of the respective area menus 
  • Area specific food product ordering through Executive Sous-Chef or Provisions Master 
  • Maintaining order and rotation of food in main kitchen refrigerators and dry storage areas 
  • Ensuring prescribed level of hygiene in kitchen as per Provincial standards 
  • Monitoring level of performance of kitchen equipment and cleanliness
 
Job Requirements  

Qualifications: 

  • Canadian Interprovincial Red Seal Certificate or recognized equivalent required 
  • FoodSafe Level 01 certificate required; Food Safe Level 02 certificate preferred 
  • Experience supervising a large staff in a high-volume food outlet or restaurant 
  • Excellent customer service and interpersonal skills 
  • Proficient in Microsoft Office, Outlook, and Excel 
  • Ability to coach, train, retain and develop employees 
  • Ability to handle responsibilities of a fast-paced, high-volume kitchen environment
