Pastry Chef will be responsible for managing the day to day operations of the Pastry Department relating to Patisserie, Chocolates, Bread and Plated dessert production while maintaining the highest level of culinary excellence. Duties include, but are not limited to, production, presentation, supervising staff, scheduling, training, mentoring, evaluating, ordering and inventory. Pastry Chef will also participate in menu planning, act as a liaison between the Chef de Cuisine and The Pointe Restaurant Leadership Team to the pastry staff. Participate and maintain the apprentice program and be responsible for ensuring a safe, sanitary and healthy working environment. Pastry Chef must be proficient in a fast paced fine dining establishment. Pastry Chef as part of the Culinary Leadership Team would be responsible for decision making and planning discussions relating to the Culinary Program at the Wickaninnish Inn and act as a Supervisor to all Kitchen employees in the absence of the Chef de Cuisine.
