Job Description

The Garde Manger Chef in charge of the guest lunches at Baldface Lodge has an elite crew to take care of. Remember that our little Lodge (4 cats with over 75 lunches to consider) is the epicentre of snowboard culture. We have guests who have waited their whole lives to come and shred with us. They dream about the moment they get to eat Baldface sandwiches and salads. This is a big responsibility that our Garde Manger Chef balances on their broad shoulders and huge biceps (from cutting all that meat and cheese).

The Garde Manger Chef is a creative foodie who gets stoked about sharing new sandwich combinations and isn’t scared to serve the best PB&J that anyone has ever had. (Caramelized peanuts are the secret!)

The Garde Manger Chef joyfully gets up pre-dawn and digs in with the team for a long and fulfilling day that culminates in plating the most delicious salads ever eaten at 2050 m. Whew, it’s a big deal, but by working together, the Baldface kitchen team gets it done!

The Garde Mange will assist the Head Chef in providing guests with an outstanding culinary experience. This position is responsible for preparing lunches, après ski appetizers and dinner salads for the guests. This person also works as a team with the Pastry Chef to assist in the completion of tasks. Must be innovative with the ability to always produce high-quality food. A dedicated team player with the ability to work in an environment where duties may vary is essential.

Responsibilities & Qualifications

Responsible for the preparation of an assortment of sandwiches and salads. Coordinate with the Pastry Chef for support in the completion of prep work when needed for baked goods and snacks.
Preparation of daily après ski appetizers which complement the daily soup prepared by the Sous Chef.
Coordinate choice of feature dinner salad with the Head Chef.
Assist the Head Chef with food preparation and help with special dietary needs dishes when needed.
Ensure an accurate inventory of ingredients for the execution of meals is kept. Prepare the food order that is under your responsibility and communicate a list of items to be ordered to the Head Chef.
Assist kitchen staff in the execution of their tasks when needed.
Assist with the planning and execution of daily meals.
