POSITION: SOUS CHEF

REPORTS TO: Executive Chef

Under the general guidance of the Executive Chef, the Sous Chef will supervise, train and direct all culinary staff in order to prepare, cook and present food according to hotel standards. You will show case your talents as a leader and ensure each dish is flawless. Your talent will ensure our banquet guests experience a place to gather, dine and connect. We trust you will consistently provide our customers with remarkable meals without delay that meets the impeccable Wall Centre standards.

What your day will look like:
• Train and supervise kitchen staff in the proper preparation of menu items, equipment and safety measures.
• Evaluate performance and give guidance and feedback as necessary to promote quality products.
• Visually inspect, select and use only the freshest and highest quality ingredients.

• Monitor to ensure proper receiving, storage and rotation of food products to comply with health department standards, including coverage, labeling, dating and placement of items in correct containers to avoid cross-contamination.
• Observe production quantities and make corrections to observe cost and quantity schedules.
• Check to make sure all equipment is kept clean and serviceable, ensuring maintenance requests are filed and submitted.
• In addition, daily cleaning and inventory of walk-in storage and refrigerators for stock rotation and cleanliness.
• Due to the cyclical nature of our industry, employees will be required to work varying shifts due to the needs of the business within the hotel.
• Perform other duties as necessary and assigned, such as VIP parties and special orders

Responsibilities & Qualifications

• Red Seal Certification Preferred.
• Must have Food Safe Certification.
• Completion of a recognized culinary program-Certified Cook level or higher.
• Should have a minimum of five (5) years’ experience in a comparable 4 Diamond hotel or restaurant in a similar position.
• Excellent guest service skills are required.
• Ability to handle knives, pots, mirrors or other display items as well as grasp, lift and carry the same.
• Must be able to speak, read, write and understand English, second language is an asset.
• Must have strong communication skills, both verbal and written.
• Walking and standing are required; you must be able to exert a well-paced mobility to get to other departments in the hotel on a timely basis.
• Must be able to lift up to 50 lbs. occasionally.
• Must be able to push and pull carts weighing up to 250 lbs. occasionally.
• Must be able to lift up to 15lbs. on a regular basis.
• Ability to demonstrate basis culinary techniques ie. cutting, cooking principles etc.

Salary/Wage

$68,000.00-$73,000.00 per year
