Job Description

Fol Epi is an artisan bakery dedicated to sustainable baking practices, working with organic, locally sourced ingredients, heritage grains such as red fife wheat, and naturally leavened breads. We are currently seeking a skilled and experienced baker to join our production team in a full-time capacity.
This is a specialized role, ideal for someone with deep knowledge of traditional bread-making techniques and a passion for working with exceptional ingredients.

Responsibilities & Qualifications

Key Responsibilities:
• Daily mixing, fermentation, shaping, and baking of naturally leavened breads
• Skilled hand-shaping and scoring of baguettes and other long-fermented doughs
• Production of bakery-related savory items, including:
o Fermented vegetables and pickles
o Emulsified sauces (e.g., mayonnaise)
o Compound butters
o Sandwich preparation and assembly
• Daily and weekly maintenance and deep cleaning of all bakery equipment and workspaces
• Managing multiple products simultaneously with precision and care
Required Experience & Qualifications (Non-Negotiable):
• Minimum 4 years of professional bakery experience
• Demonstrated expertise with high-hydration sourdough doughs (80%+ hydration)
• Proven ability to work with heritage wheat varieties such as Red Fife and other whole grains
• Proficiency in hand-shaping and scoring baguettes
• Food Safe certification
• Strong familiarity with fermentation and preservation techniques
• Physical ability to lift 50 lbs repeatedly and remain on your feet for extended periods
• Comfortable with early mornings (5:00 AM start), weekend shifts, and working holidays
• Flexibility to cover additional shifts on short notice
• Must work well under pressure both independently and as part of a small team

Additional Assets (Preferred but Not Required):
• Formal baking or culinary education
• Previous experience working in a values-driven, farm-to-table, or heritage-focused bakery environment
