Job Description

Position: Pastry Sous Chef (Full-Time) – Day and Evening Shifts

Reports to: Pastry Chef

Come work with and learn from Victoria’s own Executive Chef Kristian Eligh and celebrated Pastry Chef Dominique Laurencelle as they design seasonally focused menus that celebrate the global and locally sourced ingredients. Marilena Cafe & Raw Bar was recognized as one of Canada’s 100 Best Restaurants, ranking #39 in 2025. At the Vancouver Magazine Restaurant Awards, Marilena was celebrated as the Best Restaurant in Victoria. and is celebrated for its locally sourced West Coast cuisine.

Responsibilities & Qualifications

ESSENTIAL DUTIES AND RESPONSIBILITIES:

Assisting with the day-to-day operations of the pastry kitchen, ensuring efficiency and excellence.
Mentoring and educating the pastry team, fostering growth and skill development.
Designing and executing innovative, elevated desserts, pastries, and breads.
Demonstrating expertise in chocolate work, bread-making, and classic baking techniques and procedures.
Maintaining exceptional cleanliness and ensuring all equipment is kept in optimal condition.
Leading by example to inspire and motivate the team to deliver an exceptional guest experience.
Managing inventory and costs effectively, optimizing resources to maintain quality and profitability.
Contributing to menu development with creativity and attention to detail.

REQUIRED EXPERIENCE AND QUALIFICATIONS:

Minimum of 3-5 years of experience in a similar role, with a strong background in hotel or fine dining restaurant environments.
Flexibility to work evenings, weekends, and holidays as required.
A degree/diploma in Culinary Arts or an equivalent combination of education and hands-on experience.
Strong knowledge of bread-making and classic baking techniques.
Experience working with chocolate, including techniques such as tempering, molding, and creating chocolate-based desserts.
Exceptional organizational skills, with the ability to manage multiple tasks and projects simultaneously.
A positive, energetic, and motivated team player with a commitment to delivering premium quality.
Excellent interpersonal, communication, and presentation skills.
The ability to thrive under pressure in a fast-paced, dynamic kitchen environment.
