Job Summary:

As the Restaurant Chef, you are an indispensable member of our culinary team, working closely with the Director of Outlets and Executive Chef to oversee all aspects of our kitchen operations. This role demands exceptional culinary expertise, exemplary leadership skills, and an unwavering commitment to delivering extraordinary dining experiences. Collaborating closely with the Director of Outlets and Executive Chef, you play a vital role in ensuring the kitchen runs seamlessly and consistently produces food of the highest quality. The role of Restaurant Chef is pivotal in maintaining our restaurant’s esteemed reputation for exceptional cuisine and service. This position offers opportunities for professional growth and empowers you to be a driving force behind the culinary excellence our establishment is known for.

Key Responsibilities:

Culinary Excellence: Your commitment to culinary excellence shines through as you demonstrate mastery in various cooking techniques, impeccable knife skills, and meticulous food preparation. Your creativity comes to the forefront as you craft innovative, visually appealing, and mouth-watering dishes that consistently meet and exceed our exacting standards.

Menu Development & Kitchen Operations: Working in tandem with the Executive Chef, you contribute to menu development and updates, considering seasonality, customer preferences, and cost control. Your role extends beyond meal preparation; it involves crafting memorable culinary experiences. You also oversee daily kitchen operations to ensure the highest standards of food quality, safety, and sanitation are maintained.

Leadership & Quality Control: As a guiding force in our kitchen, you lead, inspire, and mentor our kitchen staff, including cooks, sous chefs, and other talented individuals. Providing guidance, training, and ongoing coaching is essential to maintain consistent high performance and unwavering adherence to our recipes and standards. You’ll hire, train, and supervise kitchen staff, ensuring they are well-versed in proper preparation, equipment use, and safety protocols.

Safety, Compliance, & Collaboration: Prioritizing patron safety and satisfaction, you enforce and uphold kitchen health and safety standards diligently. This includes stringent practices related to food handling, storage, and sanitation. You also foster open communication with our front-of-house staff to ensure seamless service, address customer feedback, and make necessary adjustments to dishes and procedures.

Cost Management: Our commitment to culinary excellence extends to financial responsibility. You collaborate with the Executive Chef to manage food costs by minimizing waste, controlling portion sizes, and vigilantly monitoring inventory levels. Your analytical skills are put to the test as you work closely with the Executive Chef on cost analysis and budget planning. Efficiently scheduling kitchen staff to ensure adequate coverage while managing costs is a critical task.

Food Presentation & Training: Aesthetics play a crucial role, and you ensure that every dish is plated and presented according to our restaurant’s exacting standards for visual appeal and consistency. Beyond presentation, you foster a culture of continuous learning in the kitchen, providing ongoing training and development opportunities to elevate the skills and creativity of our kitchen team.

Qualifications:

Proven track record as a Sous Chef or in a similar role within a prestigious restaurant or hotel.
While not mandatory, a culinary degree or relevant culinary certifications are highly regarded.
Strong leadership skills with effective communication and people management abilities.
A deep passion for food, reflected in exceptional cooking skills and a steadfast commitment to the culinary craft.
Proficiency in kitchen best practices, including food safety and sanitation, with a strong commitment to adhering to these standards.
Thriving in a fast-paced, high-pressure kitchen environment and maintaining composure under stress.
Creativity and active contribution to menu development.
Exceptional organizational and time management skills.
Availability to work evenings, weekends, and holidays as needed, showcasing your dedication to your craft.
Physical Requirements:

Physical fitness and the ability to stand for extended periods.
Proficiency in lifting and carrying heavy pots, pans, and trays.
Adaptability to the hot, noisy, and fast-paced kitchen environment.
Essential Functions:

Beyond culinary expertise, your role encompasses management responsibilities. Conducting regular performance evaluations, providing guidance, and, when necessary, implementing disciplinary measures are within your purview.
You’ll manage costs effectively, covering labor, food, and operational expenses.
Upholding our commitment to quality, you’ll source only the freshest and highest-quality ingredients for our menu items. Preparing supply requisitions and ordering food products and supplies daily is part of your routine.
Vendor management is another aspect of your role, maintaining relationships and ensuring the robustness of our supply chain.
Exciting opportunities arise in handling VIP events and creating promotional menus.
Managing recipes, including maintenance and updates, and overseeing pictures and product forecasts are essential aspects of your role.
Monitoring food product receiving, storage, and rotation to meet or exceed health department standards.
You’ll ensure equipment cleanliness and maintenance, promptly submitting maintenance requests.
Actively contributing to the promotion and marketing of the restaurant, staying informed about the latest food trends and presentation techniques.
Your role extends beyond leadership; you’ll be actively involved in daily kitchen activities, regularly working on the line and in food preparation.
Consistently enforcing Wall Centre SOPs, particularly those related to kitchen and food safety.
Other:

Consistent attendance is critical to the role.
Flexibility in working varying shifts, including evenings, weekends, holidays, and occasional overnight shifts, is a necessity.
Adherence to restaurant rules and regulations is non-negotiable, with potential disciplinary action for violations.
Supervising daily cleaning and inventory management of refrigerators, freezers, and storage areas is part of your role.
Specific Job Knowledge, Skills, and Abilities:

Strong communication skills, both written and verbal.
Proficiency in a second language is an asset.
Experience working in fine dining, such as Michelin stars and Gault & Millau, is a valuable asset.
Red seal or equivalent.
Your ability to lead and manage a large kitchen team is evident in your previous experience.
Thorough knowledge of food safety standards, sanitation, and health codes is a must.
Effective customer service and conflict resolution skills are part of your skill set.
Familiarity with equal opportunity and civil rights laws is essential.
Comprehensive knowledge of Marriott allergen and intolerance procedures is a plus.
Strong familiarity with Optimum Control or similar programs is advantageous.
Proficiency in current POS systems enhances your qualifications.
Physical Demands:

While most tasks occur indoors, you should be prepared for varying environments, from freezers (-18ºF) to hot kitchen lines (+110ºF).
Your mobility will be tested, with the ability to work for up to 10 hours a day.
Elevated noise levels may necessitate shouting to communicate effectively.
Promptly reaching different departments is essential.
Lifting, carrying, and pushing objects up to 50 lbs.
